Carrot Cake with Cream Cheese Frosting topped with Walnuts
* Ingredients :
+Cake Dough:
°1 can yellow cake mix
°3 eggs
°1 cup water
°1/2 cup applesauce
°2 cups grated or processed carrots.
°Mix until combined and without lumps.
+Frosting:
In a separate bowl, add
4 oz fat-free cream cheese at room temperature
1 tsp sweet condensed milk
3 Tbsp powder sugar mixed with 2 1/2 Tbsp water
With a hand mixer, beat until smooth and creamy. Set aside
30 grams of chopped walnuts is where you want to use your scale. You will get more powder for the points 🙂
Cook 45-50 minutes or until the skewer inserted in clean spring, this one is tricky although the skewer was clean mine could have done with 5 minutes more, so ovens vary to check at 45 minutes.
Let cool for 20 minutes before turning to the selected plate.
When you are ready to freeze, make sure your frosting is thin enough to water if not, you can microwave it for 10 seconds at a time until it is, don’t cook your cheese to cream.
Freeze or sprinkle your cake however you like. Top with nuts for a crunch that goes well with this fluffy cake and why not add a few grated carrots for a little color.
