SMOTHERED PORK CHOPS


*Ingredients

°FOR THE PORK CHOPS
°1 pound bone-in pork chops, 1 inch thick
°1 teaspoon poultry seasoning or seasoning salt
°1/4 tsp fresh ground pepper
°2 tsp of olive oil
°2 tsp unsalted butter
°FOR ONION SAUCE
°1 tsp unsalted butter
°1 large yellow onion, thinly sliced
°pinch of salt
°3 garlic cloves, minced
°1/2 tbsp chopped fresh thyme
°1/2 c low sodium chicken broth
°1/4 c cream heavy
°fresh parsley for garnish

* Methods

Season pork chops with seasoning salt and pepper.
Heat melt and butter in skillet over medium-high heat to the butter is melted. Add the pork chops to the skillet and sear for 5 minutes on each side, until browned. If the pan is not large enough, cook the pork chops in batches. Transfer to a plate and keep covered.
Returning skillet to heat and add a tsp of butter; melt on heat. Stirring in chop onions and adding pinch of salt. Cooking onions for 12 min
Add garlic and fresh thyme; continue cooking for 30 seconds. Pour in the chicken broth and using a wooden spoon, scrape up any browned bits from the bottom of the pan. Stirring in heavy cream & simmer for 1 minute.
Return the pork chops and all the pork juices to the skillet. Reduce heat to medium-low and continue cooking for 3 more minutes, or until pork is cooked through and sauce has thickened. Remove from fire; garnish with parsley and serve.
