aka Lemon Lush



*ingredients:


+For dandruff:

•1 cup softened butter, but not at room temperature

•2 cups flour

•1/4 cup of sugar

•1/2 cup of walnuts, chopped into small pieces


+For the cream cheese layer:

•2 packages (8 ounces) Philadelphia cheese

•1 cup powdered sugar


+For the pudding layer and toppings:

•2 small packages Jell-O instant lemon pudding mix

•3 cups of cold milk

•3-4 drops of lemon extract or 1 tablespoon of lemon juice - optional

•1 container (16 ounces) Cool Whip, almost completely thawed

•Lemon peel for garnish (optional)

Stir the butter, flour, sugar, and chopped pecans together in a mixing bowl. The fork works really well to mix everything together.


Place in a 9" x 13" baking dish and bake for 15-20 minutes at 350°, or until light golden brown. Take it out of the oven and set it aside to cool.


Whisk the cream cheese and sugar together until creamy and smooth. Spread over the cooled crust.


In another mixing bowl, whisking pudding mixture with the milk.


Then whisk in the lemon extract or lime juice if using. Leave to sit for 5 minutes to thicken slightly. Spreading on  cream cheese layer. Covering it and put it in the fridge for 4-6 hours. It can be refrigerated overnight.


When ready to serve, spreading whipped mix on pudding layer. Cut into 18-24 pieces (depending on how big or small they are) and garnish with fresh lemon zest
