To prevent lumps, you can mix the flour with a small amount of cold water or stock to make a slurry before adding it to the pan. Stir the mixture well to make sure there are no lumps, then gradually pour it into the meat mixture, stirring constantly.
*ingredients:
°3 lbs cooked meat
°1 t oil (lard, bacon grease, etc.)
°1 medium onion, diced
°1 small green pepper, diced (optional)
°3 tsp tomato sauce or 1 large tomato, diced
°1 teaspoon garlic powder or 3 minced garlic cloves
°2 teaspoons ground cumin
°2 teaspoons of salt
°Half a tsp of black pepper
°2 tablespoons of all-purpose flour
°1 cup water or chicken broth
°Tortilla flour, rice, or mashed potatoes, to serve
*Directions:
In a large skillet, brown the cooked meat, onion, and green pepper (if using) over high heat.
Adding tomato (or tomato) sauce, garlic powder (or fresh garlic), cumin, salt, and pepper also stir well.
Sprinkling flour over the meat also mix well. Adding water (or stock) and mixing well so that there are no lumps.
Bring the mixture to a boil, cover the saucepan, and reduce the heat to low. cook 1 hour, or until meat is tender.
Taste & adjust seasoning if need.
Serve with rice, tortillas, or mashed potatoes.
