Orange juice cake


*Ingredients 

½ cup and a half (340 grams) granulated sugar
1 cup (235 ml) vegetable oil
4 eggs
1 teaspoon of pure vanilla extract
3 cups (360 grams) all-purpose flour
3 tsp of baking powder
1 tsp of salt
½ cup (120 ml) orange juice
1 tablespoon of orange peel


*Methods 

Preheat oven 350°F/180°C, also grease a baking tray with flour.
In a mixing bowl, whisk the sugar with the vegetable oil and eggs. Mix with vanilla extract.
Adding flour, baking powder also salt. Add the orange zest and whisk the mixture until everything is combined.
Add the orange juice and blend the mixture quickly. Do not over mix the mixture.
Pour the mixture into a prepared muffin tin, and bake for 50 min
