POTATO CASSEROLE WITH CHEESE

POTATO CASSEROLE WITH CHEESE & SMOKED SAUSAGE 😋

*INGREDIENTS:

°3 cups Idaho potatoes, peeled, boiled and cubed when cool, approx. 1 pound

°4 tablespoons of butter

°4 tablespoons of flour

°2 cups of milk

°½ teaspoon of salt

°¼ teaspoon pepper

°½ lb Velveeta cheese, diced

°½ cup sharp cheddar cheese, grated

°1 lb skinless smoked sausage (Eckrich is my favorite brand)

°⅛ tsp paprika

*DIRECTIONS:

-Cut sausages in half, lengthwise, then cut into ½ inch half moons.

- Cook in a sauté pan for about 15 minutes, turning them frequently, until they are lightly golden. Meanwhile, place the cooked and diced potatoes in a 2-quart saucepan.

-Add the cooked meat and stir gently. Combine all remaining ingredients (except grated cheese and paprika) in a saucepan over medium heat until hot, melted and smooth.

-Use a whisk and stir constantly. Pour the fromage blanc sauce over the potatoes and the meat.

-Sprinkle grated sharp cheddar cheese on top, then sprinkle paprika evenly on top.

- Bake in preheated 350 degree oven for 35-45 minutes, until golden on top. Note: you can replace the sausage with ham.

Enjoy !
