Cracker Barrel Meatloaf




*Ingredients:


°2 eggs


°2/3 cup milk


°32 Ritz crackers, crushed


°1/2 cup chopped onion


°4 ounces grated sharp cheddar cheese


°1 teaspoon of salt


°1/4 teaspoon pepper


°1 1/2 lb ground beef


°1/2 cup ketchup


°1/2 cup brown sugar


°1 teaspoon of mustard


*PREPARATION:


Preheat oven to 350. Beat the eggs. Add milk and crackers. Stir in onion and cheese. Add ground beef. Mix well. Shape into bread. Bake at 350 for 45 minutes. Mix ketchup, brown sugar and mustard to make the filling. Spoon half of the filling over the meatloaf after 30 minutes of cooking. Return the bread to the oven for another 10 minutes. Pour the rest of the filling over the meatloaf, return to the oven and cook for 5 to 10 minutes more.
