Oklahoma Nut Candy




*INGREDIENTS


°6 cups sugar, divided

°2 cups thick cream

°½ cup unsalted butter

°¼ tsp baking soda

°1 teaspoon vanilla

°1 ½ cups chopped walnuts or pecans


*PREPARATION


Greased 9 13 baking dish & set apart.

In a small saucepan (with a thick bottom if you have it!), pour 2 cups of sugar and cook over low heat, stirring often. Cook until the sugar has completely melted, about 20 minutes.

While the sugar is cooked, add the remaining 4 cups of sugar and heavy cream to a large pot (or saucepan, you want a large pot here!). Simmer on low heat to the sugar in your small saucepan has melt. Add the melted sugar to a large saucepan, stirring constantly.

Bring heat to medium and cook mixture to 244 degrees F or softball stage.

Remove from heat and stir in baking soda until completely combined.

Add the butter and vanilla. Stir until the butter has melted and the mixture is smooth.

Let stand for 20 minutes.

Once the mixture has rested, stir in the nuts and stir until the chandelier has disappeared. Transfer to the prepared baking dish.

Let cool for 1-2 hours or overnight. Cut into small squares to serve.
