Rosemary dijon prime rib



*Ingredients

°(4 lb) Sterling Silver Beef Rib with Bone
°2 tablespoons prepared Dijon mustard
°1 tsp chopped fresh thyme leaves
°2 tablespoons coarsely chopped fresh rosemary
°1/2 tsp salt
°1 tsp coarsely ground black pepper

*Directions

Step 1
Remove the roast from the refrigerator and return to room temperature for 20 minutes. Preheat the oven to 160 °C (325 °F). Brush the roast with mustard, then coat with thyme, rosemary, salt and pepper. Place in a baking sheet and cook for 1 hour and 30 minutes until a meat thermometer inserted into the thickest part of the meat, away from the bone, reads 63 °C (145 °F). 
Step 2
Once the roast is cooked, transfer it to a cutting board and let rest for 15 minutes. Place in a serving dish and cut into thin slices against the grain. Serve with Dijon mustard and thyme sauce.
